Coconut, rum and shrimp. Great anytime.
PREP TIME: 5 Minutes
COOK TIME: 15 Minutes

2 lbs. Shrimp, raw, peeled, tail on
1 cup Coconut, grated
1/3 cup Honey
1/3 cup Rum
2 cloves Garlic, minced
2 Tbsp. Lemon juice

2 Mangos, peeled and sliced
1 med. Onion, diced
1 med Red Pepper, diced
1 Jalapeno Pepper, grated
2 Tbsp. Cilantro
Salt to taste

Step 1  Step 1:

Step 2  Shrimp:
Thaw, wash and peel the shrimp. Start with a cup of grated coconut and add 1/3 cup honey, 1/3 cup rum, 2 cloves minced garlic , and 2 tbsp lemon juice. Toss in the shrimp, mix it well, and sauté everything for 3-5 minutes.
Step 3  Mango Salsa:
Combine mangos, onion, red pepper, jalapeno pepper, cilantro, and salt.
