This meatloaf is covered with bacon for a flavorful twist. Serve with rosemary roasted potatoes for a complete meal.
SERVES: 8
PREP TIME: 10 Minutes
COOK TIME: 60 Minutes
Ingredients

1 Egg
1 1/2 cups Bread Crumbs
3/4 cup Ketchup
3/4 cup Brown Sugar
1 med. Onion, diced
2 lbs. Ground Beef
4-6 slices Bacon

3 lbs. Potatoes, quartered
1/4 cup Olive Oil
2 Tbsp. Rosemary, fresh
1 tsp. Salt

Directions
Step 1  Meatloaf:
Mix together one egg, 1 1/2; cups bread crumbs, 3/4; cup ketchup, 3/4; cup brown sugar, a medium onion, 2 tbsp Worcestershire sauce and 2 lbs ground beef by hand (be careful to use only 2lbs if you've bought the 3 lb. package - freeze the rest for when you need it).
 
Step 2  Step 2:
Place the meatloaf in a greased loaf pan (with uncooked bacon laid on top) and bake in a 375 degrees oven for an hour or until the internal temperature reaches 165 degrees,
 
Step 3  Roasted Potatoes:
Toss sliced potatoes with olive oil, fresh rosemary and salt. Then bake the potatoes on a greased pan at 375 degrees for 30-40 minutes
