Watermelon lime and ice come together for a refreshing treat.
PREP TIME: 15 Minutes
COOK TIME: 480 Minutes

4 cups seedless Watermelon chunks
1/2 cup Sugar
Juice of one Lime
Mint for granish

Step 1  Step 1:
Place the watermelon in a blender or food processor and blend on high speed until very smooth. Add the sugar and lime juice and blend on low speed until the sugar is completely dissolved, about 2 to 3 minutes. Pour the mixture in a 9x13 glass baking dish. Place dish in freezer and every hour, scrape the mixture with a large fork to create the granita texture. The first time you scrape, the granita will not be frozen solid. You want to start scraping while it's still slushy so that texture of the granita will be even throughout. Repeat this scraping procedure until the consistency is "snowy" when scraped with a fork or spoon, at least 4 hours.
Step 2  Step 2:
Scoop the Granita into bowls or dessert glasses, garnish with fresh mint leaves and serve.
