Caribbean jerked shrimp and fresh pineapple are skewered and grilled.
PREP TIME: 30 Minutes
COOK TIME: 15 Minutes

1 pkg. (14 oz.) Raw Shrimp with caribbean jerk seasoning
1 pkg. (14 oz.) Pineapple chunks
Olive Oil
1 can Black Beans
1 pkg. whole grain Brown Rice
Salt and Pepper

Step 1  Kebabs:
Soak the bamboo skewers in water for 30 minutes prior to grilling. Build the kebabs by alternating the shrimp and the pineapple chunks on the skewers. Very lightly brush the kebabs with oil to prevent sticking. Grill on an indoor or outdoor grill (medium heat) for approx. 2-3 minutes per side or until the shrimp is pink and no longer translucent.
Step 2  Black Beans and Rice:
In a medium sauce pan; combine 1 can of black beans and 1 package of rice. Season to taste with salt and pepper.
