Italian Sirloin Stew
Italian Sirloin Stew This hearty stew is a great comfort food for a cold fall day. If desired, other vegetables such as chopped carrots, potatoes, or green beans can be added.
PREP TIME: 10 Minutes
COOK TIME: 20 Minutes

1 pound boneless beef sirloin steak, cut 1-inch thick
1 large clove garlic, crushed
2 tablespoons olive oil, divided
2 medium onions, cut into 1/4-inch slices
1 teaspoon dried basil leaves
1/8 teaspoon ground red pepper
1 can (14.5 oz) stewed tomatoes, undrained
1 cup ready-to-serve beef broth
2 medium zucchini, cut into 1/4 -inch slices
2 teaspoons cornstarch

Step 1  Step 1:
Cut the beef steak into 1/4-inch thick strips; cut each strip into 1-inch pieces. Combine crushed garlic with 1 tablespoon oil; add beef and stir to coat.
Step 2  Step 2:
Wash and chop zucchini and onions; set aside. Heat the remaining oil in a large saucepan over medium-heat; add sliced onions and cook for 3 minutes.
Step 3  Step 3:
Sprinkle onions with basil and pepper; cook and stir 1 minute. Add tomatoes, beef broth, and zucchini. Bring to a boil; cover, reduce heat, and simmer for 15 minutes.
Step 4  Step 4:
Meanwhile, heat a large nonstick skillet pan over medium-high heat; add beef and cook for 1 to 2 minutes; add to saucepan. Stir 2 teaspoons cornstarch dissolved in 2 tablespoons water into stew and cook until slightly thickened, about 2 minutes. Remove from heat and serve. If desired, sprinkle with grated cheese.
Step 5  Step 5:
Serve stew with toasted garlic bread and a small caesar salad. To make this even more hearty, toss in some egg noodles or any other pasta shape of choice.
