Bite-size pieces of chicken seasoned with chili powder are sauteed with red bell peppers and corn for a colorful and tasty meal.
PREP TIME: 25 Minutes
COOK TIME: 15 Minutes

4 boneless, skinless chicken breast halves (about 1 pound), cut into bite-size pieces
1 tbsp. chili powder
1/2 tsp. Salt
2 tbsp. Vegetable Oil, divided
1 cup chopped onion
1 medium red bell pepper, cut into strips
1 10 oz. package (about 1-1/4 cups) frozen whole kernel corn, thawed
Hot pepper sauce (optional)
Cooked rice

Step 1  Step 1:
Rinse chicken. Pat dry. Cut into bite-size pieces.
Step 2  Step 2:
Combine chili powder and salt in shallow dish. Add chicken. Turn to coat.
Step 3  Step 3:
Heat 1 tablespoon Crisco Oil in large skillet on medium-high heat. Add chicken. Cook and stir until no longer pink in center. Remove to serving dish.
Step 4  Step 4:
Prepare rice according to package directions. Keep warm.
Step 5  Step 5:
Heat remaining 1 tablespoon Crisco Oil in skillet while rice is cooking. Add onion. Cook and stir 2 minutes or until tender. Add bell peppers. Cook and stir 3 to 4 minutes or until crisp-tender. Add corn. Heat thoroughly, stirring occasionally. Return chicken to skillet to reheat. Season with hot pepper sauce, if desired. Serve with rice. Compliment with a mixed greens salad.
