Fiery Orange-Glazed Salmon
Fiery Orange-Glazed Salmon Firm salmon fillets brushed with a simple glaze made by combining peach jam, soy sauce, cayenne pepper, and ginger are grilled to create a flavorful dish.
PREP TIME: 15 Minutes
COOK TIME: 10 Minutes

4 (4 to 6 oz. each) salmon fillets, thawed if necessary
1/4 cup orange marmalade
1/2 tsp. soy sauce
1/4 tsp. ground red pepper
1/8 tsp. ground ginger
2 large red bell peppers, cored and sliced*
1 medium onion, sliced
Oil, as needed
Salt and pepper, to taste

Step 1  Step 1:
Preheat broiler/oven or grill to medium-high heat.
Step 2  Step 2:
Place salmon fillets on non-stick or spray coated baking or broiler sheet.
Step 3  Step 3:
Blend marmalade, soy sauce, cayenne pepper, and ginger in a small bowl. Brush glaze on salmon.
Step 4  Step 4:
Place sliced vegetables on baking sheet, brushing lightly with oil and sprinkle with salt and pepper.
Step 5  Step 5:
Grill or broil 5 to 7-inches from heat, turning vegetables once, about 10 to 12 minutes, or until salmon flakes with a fork.
Step 6  Step 6:
Serve salmon and grilled vegetables with a wild rice pilaf.
