Easy Eats > Pepper Pork Chops
Pepper Pork Chops
Pepper Pork Chops Sweet, flavorful red and yellow bell peppers are thinly sliced and sautéed in a little olive oil, then simmered in chicken broth and red wine vinegar making a slightly tangy sauce that is excellent served over pork chops.
SERVES: 4
PREP TIME: 10 Minutes
COOK TIME: 15 Minutes
Ingredients

2 tsp. olive oil
4 boneless pork chops, 3/4-inch thick
2 medium red and/or yellow bell peppers, cut into thin strips
1/2 cup chicken broth
2 tbsp. red wine vinegar
1 tbsp. cornstarch
Salt and pepper, to taste
2 tbsp. parsley, chopped

Directions
Step 1  Step 1:
Heat oil in skillet over medium-high heat. Brown chops on each side; remove. Add peppers to skillet; cook and stir until crisp-tender.
 
Step 2  Step 2:
Return chops to skillet. Cover tightly; cook over low heat for 5-6 minutes or until chops are just done. Remove chops; keep warm. Push peppers from center of skillet.
 
Step 3  Step 3:
Combine remaining ingredients, except parsley, in a small bowl. Add to skillet; cook over medium heat, stirring constantly, until sauce thickens. Stir in parsley. Stir peppers into sauce to coat. Serve sauce with chops.
