Buttercup squash, vegetables and garlic are roasted and pureed with ginger, brown sugar, cinnamon and cream for a flavorful soup.
PREP TIME: 10 Minutes
COOK TIME: 60 Minutes

1 Buttercup Squash
1/2 lb .Soup mix vegetables
2 Cloves Garlic, peeled
1 Tbsp. Olive Oil
1 Pinch each Salt and Pepper
1 1/2 Tbsp. Ginger, peeled and minced
1 1/2 Cups Chicken Broth
1 Tbsp. Brown sugar
1/4 tsp. Cinnamon
1/2 tsp. Thyme (optional)
Salt & Pepper to taste
3/4 Cup Heavy Whipping Cream

Step 1  Step 1:
Preheat oven to 400 degrees F. Cut squash into four sections, remove seeds and rinse. Place on greased baking sheet skin side down and spray the flesh of each section with cooking spray. Salt and pepper each section. Place in oven and roast for 45 minutes.
Step 2  Step 2:
Place 1/2 lb of soup mix vegetables into 1 quart baking dish. Place the garlic cloves in with the mixture and add one tablespoon olive oil and salt and pepper to taste. Stir. Roast in oven along with squash.
Step 3  Step 3:
Remove squash and vegetables from the oven. Set aside. Allow squash to cool slightly; then remove flesh from skin and place flesh in blender. Add the roasted vegetable mixture to the blender as well as the chicken stock and ginger. If your blender won't take it all at once, do this in smaller batches and move to medium saucepan when done.

** Note ** To prevent spattering when blending hot foods, allow the heat to escape. Remove the cap from the hole in the blender's cover and cover with a dish towel that's been folded over a few times while blending.
Step 4  Step 4:
Once the large chunks have been pureed, transfer the mixture to a medium saucepan. Add the cream, brown sugar, cinnamon, salt & pepper to taste and thyme if you've opted to. Turn heat on low and heat until mixture is nice and hot.
Step 5  Step 5:
** Note ** Squash come in different sizes; if the soup seems a bit too thick, you may add more broth or cream to thin, adding a small amount at a time. Then adjust seasonings to your taste.
