The classic combination of Brussels sprouts and bacon gets a boost from the addition of sauteed onions, sweet raisins and a dash of cider vinegar.
SERVES: 8
PREP TIME: 10 Minutes
COOK TIME: 35 Minutes
Ingredients

1/2 cup cider vinegar
1/2 cup golden raisins
6 slices bacon
2 pounds small Brussels sprouts, trimmed
2 tablespoons olive oil
Kosher salt and pepper
1 small red onion, cut into thin half-moons

Directions
Step 1  Step 1:
Heat oven to 425 F.
 
Step 2  Step 2:
In a small saucepan, over medium heat, warm the vinegar. Add the raisins, then turn off heat and let sit 15 minutes before draining.
 
Step 3  Step 3:
In a large skillet, fry the bacon until crisp, about 7 minutes. Transfer to a paper towel-lined plate. Reserve the drippings in the pan.
 
Step 4  Step 4:
Place the sprouts on a baking sheet or in an ovenproof pan. Toss with the oil, 2 tablespoons of the reserved drippings, 1 teaspoon salt, and 1 teaspoon pepper. Roast, stirring once, for 30 minutes. Transfer to a serving dish.
 
Step 5  Step 5:
While the Brussels sprouts roast, cook the onion in the remaining drippings over medium heat for 7 minutes. Sprinkle the sprouts with the onions, crumbled bacon, and raisins. Stir to combine before serving.


MAKE-AHEAD NOTE: Trim the Brussels sprouts a couple of days in advance, and refrigerate them in an unsealed plastic bag. Cook the bacon and onion up to several hours before serving.
