This quick snack is a snap to make using pantry staples. Use crackers or toasted pita if you're out of bread.
PREP TIME: 10 Minutes
COOK TIME: 3 Minutes

1/2 baguette
1 15-ounce can chickpeas, drained, rinsed, and roughly chopped
1/2 cup fresh flat-leaf parsley leaves, roughly chopped
1 clove garlic, finely chopped
1 tablespoon extra-virgin olive oil
2 tablespoons balsamic vinegar
Kosher salt and pepper

Step 1  Step 1:
Heat the broiler.
Step 2  Step 2:
Thinly slice half a baguette and place the rounds on a baking sheet.
Step 3  Step 3:
Broil them until they're golden brown (about 1 1/2 minutes per side).
Step 4  Step 4:
In a medium bowl, combine the chickpeas, parsley leaves, garlic, oil, balsamic vinegar, 3/4 teaspoon salt, and 1/4 teaspoon pepper.
Step 5  Step 5:
Spoon the mixture on the toasted bread slices before serving.
