Grapefruit zest and a touch of ginger make this a refreshing starter and a welcome alternative to standard shrimp cocktail.
PREP TIME: 5 Minutes
COOK TIME: 10 Minutes

1/4 cup fresh mint, chopped
1 tablespoon grated grapefruit zest
1 tablespoon grapefruit juice
1 tablespoon grated ginger
3 tablespoons extra-virgin olive oil
Kosher salt
1 pound cooked medium shrimp

Step 1  Step 1:
In a medium bowl, combine the mint, grapefruit zest and juice, ginger, oil, and 1/2 teaspoon salt.
Step 2  Step 2:
Stir in the shrimp and marinate for 10 minutes in the refrigerator before serving.
