Serve this classic at a buffet or brunch. You can dress it up by mixing in chopped cooked ham or sautéed cooked vegetables when you add the cheese.
PREP TIME: 10 Minutes
COOK TIME: 55 Minutes

1 tablespoon olive oil
2 medium yellow onions, diced
Kosher salt and pepper
1 cup fresh flat-leaf parsley, chopped
4 eggs
3/4 cup half-and-half
8 ounces Gruyère, grated
1/8 teaspoon ground nutmeg
1 store-bought frozen piecrust in a tin

Step 1  Step 1:
Heat oven to 375° F.
Step 2  Step 2:
Heat the oil in a large skillet, over medium-low heat. Add the onions, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper and cook, stirring occasionally, until soft, 6 to 8 minutes. Stir in the parsley and cook 2 minutes more.
Step 3  Step 3:
Whisk together the eggs and half-and-half. Stir in the Gruyère, and nutmeg. Stir in the onion mixture and pour into the piecrust.
Step 4  Step 4:
Place the piecrust on a foil-lined baking sheet and bake until the filling is set and a knife inserted into the center comes out clean, about 40 minutes.
Step 5  Step 5:
Let rest for at least 5 minutes before cutting into wedges.
