Prosciutto chips are an easy, quick upgrade for this classic spring dish.
PREP TIME: 10 Minutes
COOK TIME: 15 Minutes

3 ounces thinly sliced prosciutto
2 small bunches asparagus, trimmed
1 tablespoon extra-virgin olive oil
Kosher salt and pepper

Step 1  Step 1:
Heat oven to 350 F.
Step 2  Step 2:
Arrange the prosciutto in a single layer on a baking sheet. Bake until crisp, 10 to 12 minutes. Transfer to a plate and let cool.
Step 3  Step 3:
Meanwhile, bring a large saucepan of water to a boil. Add the asparagus and cook until tender, 3 to 5 minutes, depending on thickness. Drain and transfer to a bowl of ice water. Drain again and pat dry.
Step 4  Step 4:
Cut the asparagus into 2-inch pieces and transfer to a bowl. Add the oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper and toss.
Step 5  Step 5:
Break the prosciutto into pieces and sprinkle over the asparagus.
