This southern classic, dressed up with creamy white cheddar and scallions, will become one of your holiday and entertaining staples.
SERVES: 4
PREP TIME: 10 Minutes
COOK TIME: 20 Minutes
Ingredients

Kosher salt
1 cup grits (not instant or quick-cooking)
1 cup (4 ounces) grated white Cheddar
2 scallions, trimmed and thinly sliced
1/4 teaspoon black pepper
1 tablespoon unsalted butter

Directions
Step 1  Step 1:
Bring 4 1/4 cups water and 1 teaspoons salt to a boil in a medium saucepan.
 
Step 2  Step 2:
Whisking constantly, slowly add the grits. Reduce heat to low and cook, stirring, until the grits are thick, creamy, and pulling away from the side of the pan, 15 to 20 minutes.
 
Step 3  Step 3:
Add the Cheddar and stir until it melts. Add the scallions, pepper, and butter and stir to combine.
