If you're short on time, don't press the yolks through the strainer and instead mash all the ingredients together in a bowl with a fork.
SERVES: 6

COOK TIME: 15 Minutes
Ingredients

6 large eggs
11/2 teaspoons Dijon mustard
3 tablespoons mayonnaise
1 teaspoon white wine or rice vinegar
Kosher salt and pepper
1/8 teaspoon paprika (optional)

Directions
Step 1  Step 1:
Place the eggs in a small pot and cover with cold water. Bring to a boil, then remove from heat and let stand 10 minutes. Run under cold water to cool. Let the eggs stand for 12 minutes.
 
Step 2  Step 2:
Peel the eggs and cut in half lengthwise. Remove the yolks and transfer a strainer set over a small bowl. Arrange the whites on a platter, cut-side up and set aside.
 
Step 3  Step 3:
Press the yolks through the strainer. Stir in the Dijon, mayonnaise, vinegar, a pinch of salt and a pinch of pepper.
 
Step 4  Step 4:
Place the yolk mixture in a re-sealable plastic bag, trim 1/2 inch from a corner of the bag. Pipe the filling into the reserved whites and sprinkle with the paprika, if using.
