It takes only twenty minutes to prepare this easy weeknight dinner, which also makes a great room-temperature party dish. If you don't care for tarragon, try substituting other fresh herbs, such as mint, basil, or chives.

COOK TIME: 15 Minutes
Ingredients

1 pound frozen cheese tortellini
2 tablespoons olive oil
1 onion, chopped
3 tablespoons unsalted butter
2 cloves garlic, finely chopped
11/2 cups frozen peas
Kosher salt and pepper
2 tablespoons chopped fresh tarragon
1/2 cup grated Parmesan

Directions
Step 1  Step 1:
Cook the tortellini according to the package directions.
 
Step 2  Step 2:
Heat the oil in a large skillet over medium heat. Add the onion and cook until soft, about 6 minutes.
 
Step 3  Step 3:
Increase heat to medium-high. Add the butter and cook until it turns golden brown, about 3 minutes. Stir in the garlic, peas, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until heated through, 2 to 3 minutes.
 
Step 4  Step 4:
Add the tortellini, tarragon, and half the Parmesan; toss to combine. Divide among bowls and sprinkle with the remaining Parmesan.
