Sweet carrots and zucchini give a fresh boost to already healthy burgers. When the weather warms up, try cooking them outside on a lightly-oiled grill.
PREP TIME: 15 Minutes
COOK TIME: 10 Minutes

3/4 pound ground turkey
1 medium zucchini, grated
1 medium carrot, grated
2 cloves garlic, finely chopped
3/4 teaspoon dried thyme
1 egg
salt and pepper
3 tablespoons olive oil
4 slices crusty bread
4 small leaves Boston lettuce
4 tablespoons mayonnaise (optional)
2 teaspoons fresh lemon juice (optional)

Step 1  Step 1:
Heat broiler. In a large bowl, combine the turkey, zucchini, carrot, garlic, thyme, egg, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Form the mixture into 4 patties.
Step 2  Step 2:
Heat 1 tablespoon of the oil in a large skillet over medium heat. Cook the patties, turning once, until no trace of pink remains, 4 to 5 minutes per side.
Step 3  Step 3:
Meanwhile, place the bread on a broiler-proof baking sheet and brush with the remaining 2 tablespoons of oil. Broil until golden and crisp, about 11/2 minutes.
Step 4  Step 4:
If using, combine the mayonnaise and lemon juice in a small bowl. Serve the burgers on toasted bread with lettuce and lemon mayonnaise.
