This recipe was prepared by Cyndy Brucato of KSTP at the 2009 Home & Garden Show. The recipe was adapted from "Julia and Jacques, Cooking at Home".
SERVES: 2
PREP TIME: 15 Minutes
COOK TIME: 20 Minutes
Ingredients

1/2 pound Cherry tomatoes
Salt and Pepper
1 bunch Italian flat-leaf parsley
1 bunch of Green Onions (scallions)
Olive Oil
2 sheets of Parchment Paper (about 20 by 15 inches)
Butter
2 salmon filets






Directions
Step 1  Step 1:
Combine cherry tomatoes, salt, pepper, parsley, green onions and about 1 Tbsp olive oil in food processor.
 
Step 2  Step 2:
Place 1 Tbsp. butter on each parchment sheet. Top with salmon filet, top with tomato mix.
 
Step 3  Step 3:
Fold parchment around salmon, staple top. Bake in 425 degree oven for 8 to ten minutes.
