Serve this saucy chicken with a large spoonful of soft polenta, spiked with fresh corn kernels.
SERVES: 4
PREP TIME: 30 Minutes
COOK TIME: 15 Minutes
Ingredients

3 to 4 Gold'n Plump Boneless Skinless Chicken Breast
1 large lemon
3 cloves garlic, finely chopped
salt and pepper to taste
2 cups grape cherry tomatoes, halved
3 tablespoons golden raisins
2 green onions, chopped
2 tablespoons brown sugar
1 tablespoons grated fresh ginger root
1/2 teaspooon red pepper flakes

Directions
Step 1  Step 1:
Heat grill to medium-high heat. Grate peel from lemon; squeeze juice. Mix lemon peel, 2 tablespoons juice (reserve the rest for tomatoes), and garlic in medium bowl or plastic resealable bag. Add chicken; turn pieces to coat with marinade. Marinate chicken for 15 to 30 minutes.
 
Step 2  Step 2:
Meanwhile, mix tomatoes, raisins, onions, sugar, ginger, and red pepper in medium saucepan over medium heat. Cook and stir about 15 minutes or until tomatoes are very tender and saucy. Stir in remaining fresh lemon juice.
 
Step 3  Step 3:
Remove chicken from marinade (discard); season with salt and pepper. Grill about 10 minutes, turning once, until no longer pink in center. Serve with tomato chutney.
 

Serving Suggestion: Serve this saucy chicken with a large spoonful of soft polenta, spiked with fresh corn kernels. If you've got a stand of early summer chives in your garden, substitute them for the green onions in the tomato chutney.
