Fresh grapes are a sweet and juicy addition to this easy-prep baked chicken dish.
SERVES: 4
PREP TIME: 5 Minutes
COOK TIME: 20 Minutes
Ingredients

2 tsp. Olive Oil
4 Bone-In Chicken Leg Quarters, skinned
1/2 tsp. pepper
1/4 tsp. salt
2 cups seedless red grapes
1 tsp. Dried Thyme Leaves
4 large Shallots

Directions
Step 1  Step 1:
Heat oven to 425 degrees. In 12-inch ovenproof skillet, heat 1 tsp. oil over medium-high heat.
 
Step 2  Step 2:
Sprinkle chicken with salt and pepper.
 
Step 3  Step 3:
Add chicken to skillet; cook 8 minutes, turning once, until browned. Remove skillet from heat.
 
Step 4  Step 4:
In medium bowl, mix remaining 1 tsp. oil, the grapes, thyme and shallots. Spoon grape mixture around chicken in skillet.
 
Step 5  Step 5:
Bake uncovered until chicken reaches an internal temperature of 165 degrees.
 
Step 6  Step 6:
To serve, spoon grape mixture and shallots evenly over chicken.
