This is the perfect recipe if you are looking for a great side dish for those summer parties.
PREP TIME: 5 Minutes
COOK TIME: 45 Minutes

3 cups cauliflowerets
1 cup chopped fresh mushrooms
1/2 cup chopped red onion
1 T. olive oil
2 tsp. lemon juice
2 tsp. apple cider vinegar
1/2 tsp. salt
1/4 tsp. pepper
2 garlic gloves, finely chopped
1/3 cup chopped green onions

Step 1  Step 1:
Heat oven to 350 degrees. Spray square baking dish, 9x9x2 inches, with cooking spray.
Step 2  Step 2:
Mix all ingredients except green onions. Spread evenly in baking dish.
Step 3  Step 3:
Bake uncovered 40 to 45 minutes, stirring occasionally, until vegetables are tender and golden brown. Sprinkle with green onions.
