This simple roast pork loin recipe is seasoned with an aromatic herb and garlic rub and then roasted to perfection. See how to roast this juicy, tender pork loin.
PREP TIME: 125 Minutes
COOK TIME: 20 Minutes

2 whole Garlic cloves, minced
2 tbsp. olive oil
2 sprigs fresh rosemary sprigs, or 1/2 tsp. dried crushed rosemary
3-4 lb. pork loin, boneless, trimmed, with 1/8-inch layer of fat
2 tbsp. canola or peanut oil
1 dash kosher salt, to taste
1 dash black pepper, to taste

Step 1  Step 1:
Combine the garlic, olive oil, and rosemary in a container roughly the size of the pork loin. Add the pork and rub with the marinade. Let it sit for 2 hours.
Step 2  Step 2:
Preheat the oven to 400 degrees. In a heavy bottomed skilled or ovenproof saute pan over a high heat, heat the canola oil until smoking hot. Remove the fresh rosemary, if used, and season the pork with salt and pepper. Carefully place the pork in the oil, and cook on all sides until golden brown, about 5 minutes.
Step 3  Step 3:
Pour off excess oil. Put the pan in the oven and cook until pork loin feels stiff to the touch, about 14 minutes. Let stand for 5 minutes and carve in 1/2-inch slices.
