Black beans absorb other flavors superbly, so try to leave this for at least 20 minutes before serving to allow the different flavors to blend together.

Ingredients

2 - 15 oz. cans black beans, rinsed
1 - 15.24 oz. can whole kernel corn, drained
2 large tomatoes, chopped
1 large avocado, diced
1/2 red onion, chopped
1/4 cup chopped fresh cilantro

Dressing:
1 Tablespoon red wine vinegar
3 - 4 tablespoons lime juice
2 tablespoons olive oil
1 tsp. salt
1/2 tsp. pepper

Directions
Step 1  Step 1:
Combine all ingredients in bowl. Cover and chill.
 
Step 2  Step 2:
Garnish with avocado slices or cilantro sprigs, if desired. Serve with tortilla chips.
