These moist, filling muffins are a perfect additions to kids lunches. With oatmeal, banana, zucchini they are nutritious and also delicious!
PREP TIME: 20 Minutes
COOK TIME: 30 Minutes

1 cup shredded zucchini (with or without skin)
3 to 5 ripe bananas
1/2 cup firmly packed brown sugar
1 egg
1-1/2 tsp. baking soda
1-1/2 tsp. baking powder
1-1/2 cups all-purpose flour
1 cup quick-cooking oatmeal
1/2 cup melted butter
1/2 tsp. salt (optional)

Step 1  Step 1:
Shred the zucchini. smash bananas into zucchini to equal 2-1/2 cups. (there should be a few lumps of bananas)
Step 2  Step 2:
Add Sugar and eggs. Mix in melted butter.
Step 3  Step 3:
In separate bowl combine dry ingredients. Add dry to wet and mix until well combined
Step 4  Step 5:
Spray muffin pan with cooking spray and lightly flour them. Fill muffin cups 3/4 full. Bake in 350 degrees for 20-30 minutes, or until toothpick comes clean.
Step 5  Step 6:
Let rest for 2 minutes. Remove from pan to cooling racks.
