Who doesn't love a chop, toss and bake recipe! SO EASY!! This Kielbasa and roasted vegetables fits that bill.
SERVES: 6
PREP TIME: 20 Minutes
COOK TIME: 40 Minutes
Ingredients

3 medium sweet potatoes, peeled and cut into 1-inch pieces
1 large sweet onion cut into 1-inch pieces
4 medium carrots, cut into 1-inch pieces
2 Tbsp. olive oil
1 pound smoked kielbasa or Polish sausage, halved and cut into 1-inch pieces
1 medium myellow summer squash cut into 1-inch pieces
1 medium zucchini, cut into 1-inch pieces
1/4 tsp. salt
1/4 tsp. peper
Dijon mustard, optional

Directions
Step 1  Step 1:
Preheat oven to 400 degrees. Divide sweet potatoes, onion and carrots between two greased 15x10x1. baking pans. Drizzle with oil; toss to coat. Roast 24 minutes, stirring occasionally.
 
Step 2  Step 2:
Add kielbasa, quash and zucchini to pans; sprinkle with salt and pepper. Roast 15-20 minutes longer or until vegetables are tender. Transfer to a serving bowl. toss to combine. If desired, service with mustard.
