These egg cups are perfect for morning on-the-go - coffee mug in one hand, egg cup the other.
SERVES: 4
PREP TIME: 10 Minutes
COOK TIME: 15 Minutes
Ingredients

1 small sweet potato
1/4 cup shredded cheddar jack cheese
1/2 tablespoon garlic powder
8 large eggs
slat and pepper, to taste

Directions
Step 1  Step :
Preheat oven to 375 degrees Fahrenheit. Grease muffin tin with cooking spray.
 
Step 2  Step 2:
Peel a small sweet potato. Using a cheese grater, grate sweet potato into a medium bowl. Add cheddar cheese and garlic powder and mix until well combined.
 
Step 3  Step 3:
Spoon sweet potato mixture into the bottom of 8 muffin tins (about 1 tablespoon).
 
Step 4  Step 4:
Crack a large egg on top of each cup and season with salt and pepper to taste.
 
Step 5  Step 5:
Bake eggs for 13-15 minutes or until eggs are at desired consistency.
