Easy Roasted Pork Tenderloin & Sweet Potatoes Easy Roasted Pork Tenderloin & Sweet Potatoes
A sweet and spicy seasoning rub for pork tenderloin and sweet potatoes features brown sugar, McCormick? Chili Powder and Cinnamon. Roasted together on one sheet pan, this recipe makes for an easy dinner with minimal clean-up any night of the week.
SERVES: 6
PREP TIME: 10 Minutes
COOK TIME: 30 Minutes
Ingredients

1/4 cup packed brown sugar
2 teaspoons McCormick Chili Powder
1 teaspoon salt
1/2 teaspoon McCormick Cinnamon, Ground
1/2 teaspoon McCormick Garlic Powder
2 medium sweet potatoes, peeled and cu into 1-inch cubes
1 medium onion, cut into thin wedges
2 tablespoon butter, melted
1 pork tenderloin, about 1 pound

Directions
Step 1  Step 1:
Preheat oven to 375F. Mix brown sugar and seasonings in large bowl. Reserve 2 tablespoons. Add sweet potatoes, onions and butter to bowl; toss to coat well. Spread in large, shallow, foil-lined baking pan sprayed with no stick cooking spray.
 
Step 2  Step 2:
Roast 10 minutes. Rub pork tenderloin with reserved seasoning mixture. Push sweet potatoes and onions to one side of pan. Place pork tenderloin on other side.
 
Step 3  Step 3:
Roast 25 minutes or until pork is desired doneness and sweet potatoes are tender. Slice pork and serve with sweet potatoes and onions.
