Stuffed Cabbage Rolls Stuffed Cabbage Rolls
These plump cabbage rolls, stuffed with ground beef, are nestled on a bed of sauerkraut. A lightly sweetened tomato sauce pulls them both together.
PREP TIME: 15 Minutes
COOK TIME: 40 Minutes

16 medium to large cabbage leaves
1-1/2 pounds lean ground beef
1 cup chopped onion
2 cups cooked white rice
2 large eggs, lightly beaten
1/4 cup snipped fresh parsley
1/2 teaspoon salt
1 (32 ounce) jar sauerkraut, rinsed and well drained
1 (15 ounce) can tomato sauce
1/4 cup water
1/4 cup packed brown sugar
4 teaspoons lemon juice
Dash McCormick Allspice, Ground

Step 1  Step 1:
Preheat oven to 350F. Lightly grease two 2-quart rectangular or square baking dishes. Trim veins from cabbage leaves. Immerse leaves, four at a time, into boiling water. Cook for 2 to 3 minutes or until leaves are just limp. Carefully remove leaves with tongs or a slotted spoon; drain well.
Step 2  Step 2:
Meanwhile, cook ground beef and onion in a large skillet until meat is brown; drain off fat. Transfer to a medium bowl; stir in rice, eggs, parsley and salt.
Step 3  Step 3:
Divide sauerkraut evenly between the two prepared baking dishes.
Step 4  :
Place about 1/3 cup of the filling in the center of each cabbage leaf; fold in sides. Starting at an unfolded edge, carefully roll each leaf, making sure folded sides are tucked into the roll. Arrange cabbage rolls on sauerkraut in baking dishes.
Step 5  :
Stir together tomato sauce, water, brown sugar, lemon juice and allspice (or cloves); pour sauce over cabbage rolls. Bake, covered, for about 40 minutes or until heated through.
