The combination of white wine, lemon and capers makes a light, tangy sauce for white fish in this quick recipe. Serve with a hearty salad or alongside rice and green beans.
SERVES: 4

COOK TIME: 25 Minutes
Ingredients

4 (5 ounce) fresh or frozen whitefish fillets, such as tilapia or cod
1/4 teaspoon salt
1/8 teaspoon McCormick Black Pepper, Ground
1 tablespoon olive oil
1/4 cup finely chopped shallots (2 medium)
2 tablespoons drained capers
2 teaspoons finely shredded lemonpeel
1/2 cup dry white wine
1 tablespoons snipped fresh oregano

Directions
Step 1  Step 1:
Thaw fish, if frozen. Preheat oven to 450F. Line a shallow baking pan with foil; set aside. Rinse fish; pat dry with paper towels. Arrange fish in a single layer in the prepared baking pan. Sprinkle with salt and pepper. Bake for 10 to 12 minutes or until fish flakes easily when tested with a fork.

Meanwhile, in a large skillet, heat oil over medium-high heat. Add shallots; cook and stir about 3 minutes or until tender. Stir in capers and 1 teaspoon of the lemon peel. Add wine. Cook, uncovered, for 4 to 5 minutes or until wine is nearly evaporated. Remove from heat. Stir in oregano.
 
Step 3  Step 3:
To serve, spoon caper mixture over fish. Sprinkle with the remaining 1 teaspoon lemon peel.
